Eggs in sweet potato nests

What you need: makes 3 nests

• one sweet potato (spiralized)

• 3 eggs (or as many as you prefer)

• 1tbs. olive oil

• salt and pepper

• cilantro + avocado for topping

What to do:

Peel the potato, cut off the tips on either end to make it easier to attach to the Spiralizer. Once you have the spiralized potato heat up a cast-iron pan. Add the olive oil, wait for it to heat up, then add the sweet potato. Cook for about 10 minutes or until tender, divide into three sections, and crack an egg in the middle of each nest. Cover the cast-iron pan and let the eggs cook until they are just set (2-5 min). Add salt and pepper to the each nest and enjoy!
